Your profile name is tied to your Facebook profile. If you connect to Facebook in-game you will see your profile name displayed. Changing your name on Facebook will also change it in-game.
If you are using a local game profile or "Sign in with Apple" profile, you will use an auto-generated "guest" name - this cannot be changed.
